Made from beef, beer and gingerbread, the carbonade or carbonnade is a delicious dish.
Specialty of the North of France, it is also called the ch'ti bourguignon.
Ingredients for 5-6 people:
- 1 kg of beef (Burgundy meat)
- 1 liter of draft beer (type 3 Monts, Goudale, Jeanlain)
- 500 g of gingerbread
- 2 sheets of laurel
- 3 onions
The Flemish carbonade is considered a simple recipe, economical and easy to achieve while being greedy and very tasty.
Recipe of the Flemish carbonade:
Start by cutting the beef (if it was not done by your butcher) in chunks of about 5 cm.
Peel the onions and mince them not too finely.
Heat the Dutch oven with a little oil
Brown the pieces of meat for a few minutes and then add the onions for 2 to 3 minutes.
Pour the beer to cover the meat completely and add the bay leaves.
Sprinkle the gingerbread over it.
Cook over low heat and covered for 1h30 to 2 hours
Stir regularly to prevent it from catching at the bottom of the pot.
