Full of freshness and an exotic twist, this vermicelli salad, crisp vegetables and cheese is a delight.

Ingredients for 4 persons:

  • 200 g of soy or rice vermicelli
  • 25 g unsalted cashews
  • 1/2 boot of pink radishes
  • 1/2 bunch of new onions
  • 1 yellow pepper
  • 50 g of cow tomme
  • 2 cm of ginger fresh
  • 2 tbsp. soup of soy sauce
  • 2 pinches of Espelette pepper
  • 2 tbsp. dehydrated wakame seaweed
  • 2 tbsp. oil of rapeseed

Fresh salad with vermicelli

- Put the rice or soy vermicelli in a bowl of fresh water. Let them rest for 5 minutes, then cook for 2 minutes in a large saucepan of salt water. Drain and arrange in a cool place.

- Heat a skillet without fat and roast the cashews.

Book them.

- Wash, harden and slice radishes.

- Wash the onions and cut their stems. Slice them thinly and part of their stems.

- Wash and slice the pepper.

- Crush and cut the tomme of cow in dice.

- Prepare the vinaigrette: peel and grate the ginger to obtain about ó cuil. coffee. In a bowl, pour the soy sauce, chilli, ginger, seaweed and oil. Mix. Correct the seasoning if necessary.

- In a salad bowl, arrange all ingredients, then drizzle with vinaigrette and sprinkle with crushed cashews.
