Here is a salad of langoustines at once fruity and full of freshness.

Ingredients for 4 persons:

  • 1 curly salad
  • 16 langoustines living 20/30 caliber
  • 2 untreated oranges
  • 4 leaves of lemongrass
  • 30 cl of crustacean stock

The sauce

  • 5 cl of pure orange juice
  • the juice of 1/2 lime
  • 1 tbsp. mustard
  • 2 tbsp. tablespoon of olive oil
  • 1 tbsp. liquid honey
  • Tabasco
  • Fine salt
  • Ground red pepper

- Wash an orange. With the help of a zester, take the zests from the orange. Blanch them in boiling water for 3 minutes. Refresh, drain.

- Peel the 2 oranges in the open. Lift the segments. Book.

- In a salad bowl, emulsify all the elements of the sauce.

- Clean and prepare the curly salad.

- Cook the langoustines in the boiling fish stock, 3 to 4 minutes. To dissect them. Keep the heads for the decor.

- Chop the lemongrass leaves.

- Arrange the salad in the bottom of the plate. Place harmoniously the orange supremes, the shelled langoustines, the orange zest and the chopped lemongrass leaves. Serve with the vinaigrette.
