Deliciously scented, this salmon pie recipe and red wine sauce is a treat.

Ingredients for 4 persons:

  • 600 g salmon fillets with skin
  • 800 g of leeks quite small
  • 100 g of Paris mushrooms
  • 1 carrot
  • 200 g ofshallots
  • 1 onion
  • 150 g of butter
  • 5 cl of liquid cream
  • 75 cl of red wine from the Loire
  • 1/2 liter of freeze-dried fish stock
  • 1 tbsp. tablespoon caster sugar
  • 50 g toasted sesame seeds
  • 2 cl of olive oil
  • 1 bouquet of chervil
  • 1 branch of thyme
  • 2 sheets of laurel
  • 1 pinch of Guérande sea salt flower, pepper

- Peel the carrot and onion. Wash mushrooms and leeks.

- Mince all vegetables without mixing.

- Make a bouquet garni by combining thyme, bay leaf and half of the bunch of chervil.

- Cook the onions in 30 g butter and 1 cl oil. Give some color. Add carrot and mushrooms. Wet with the red wine, add the bouquet garni. Boil, flambé.

- Add the fish stock and sugar. Cook to a boil until 1/4 liter of liquid remains. Skip to Chinese and book.

- Salt, pepper and bread with sesame salmon. Cook in a pan in 1 cl oil and 30 g butter.

- Steam leeks in 30 g of butter. Season and add the cream.

- Reduce the aroma again and add butter to make this sauce look shiny.

- In a plate, prepare a sauce mirror, the salmon pavé, a small band of leeks sprinkled with sesame. Decorate with a sprig of chervil.
